Domestic processing

Beef, pork & other livestock

Every animal and cutting order is different. These examples provide a general idea of common yields and cuts.

A note about return weight Please keep in mind that all weights and quantities are approximate. Return weight depends on the makeup of the individual animal, as well as trim preferences and the cutting order. For example, a cow carrying more fat may yield less packaged meat than a leaner animal of the same live weight.
